One Pot Wonder- Coconut Red Lentil Soup

I made this one pot wonder over the weekend to share with some friends.  It made a lot.  We had enough for 5 of us, plus I got 2 lunches and a friend of mine kept some leftovers. It was really good and you all should try this at home.

I didn't take a picture of the finished soup. Here are the red lentils I used. Besides tasting amazing, it was also a cool color because these little suckers are such a pretty color.

Into the pot went:

  • a few tablespoons of olive oil, plus a little bit of Mongolian fire oil
  • 2 red onions, diced
  • 4 cloves garlic, minced
  • some fresh ginger, chopped up pretty small
  • 2 jalapenos, diced
  • 2 cans light coconut milk
  • 4 cups veggie broth
  • 2 cups red lentils
  • 2 bunches cilantro, chopped
  • a few scallions, sliced
  • salt
  • juice from 1 lime

The ingredients went into the pot in the order listed.  I let the onions, garlic, ginger, and jalapenos cook for about 5 minutes before adding the rest.  After I added the lentils, I let it all simmer for about 40 minutes and added the cilantro, scallions, salt, and lime juice at the very end.  I removed it from the heat and just stirred in those ingredients.  I will definitely make this again soon.
