Holy Moly! I ran 5 miles this morning and I came home starving. I had read this recipe for Paleo Pumpkin Waffles a couple of weeks ago and I could not get them out of my head. I do not follow a Paleo diet, but I do try to keep things healthy. My version of these waffles would not be Paleo friendly because I added in teff flour. They are however hearty, amazingly tasty, and good for you. I would actually like them to be more pumpkiney so I’ll play around with it next time. In the meantime, you should make them and let me know what you think.
Sorry Sunday, this week I’m cheating on you because I’m madly in love with Saturday.
I mixed up:
- 1/2 cup pumpkin
- 3/4 almond flour
- 1/2 cup teff flour (I had teff flour on hand from when I did the cleanse last spring. I think any flour you have would work. I liked how they came out with teff and would use it again, but I also have brown rice flour and might try that next time to see the difference)
- 1/2 cup almond milk
- 1/8 teaspoon baking soda
- 1/8 teaspoon baking powder
- 6 egg whites
- a handful of dark chocolate chips (about 1/8 cup)
I cooked them up on the waffle iron. This made 3 big waffles. I’m sticking 2 in the freezer for a rainy day. Or maybe for tomorrow.
