July 13, 201- Gazpacho

I don’t have a picture to share today, but last night I had a friend over for dinner.  Actually, I had a friend come over and make dinner in my kitchen while I sat and watched.  I do love to cook and feed others, but this was pretty nice too!  The meal of the evening….which was perfect for these rather warm nights we’ve been having was gazpacho.  This is what went in:

  • Tomatoes
  • Orange pepper
  • Jalapeno
  • Scallions (I think)
  • Red onion
  • Cucumber
  • Olive oil
  • Lime juice
  • Garlic
  • Salt
  • Pepper

When I’ve made gazpacho in the past, I’ve always pureed all of it.  What I loved about this version was that only about half of it went in the blender and which was then mixed back in.  It. Was. Delicious. I can’t wait to make this when the tomatoes in my garden are ready to eat.
