I made this salmon last night for dinner. It’s a recipe from Food & Wine that I read recently and wanted to try. I cut it way down since I wasn’t cooking eight pieces of fish. It was seriously out of this world. If you like salmon, you must make this. Since I don’t have a grill, I cooked it on my George Foreman. Maybe one day when I grow up, I’ll get a real grill. I roasted some veggies to have with it…butternut squash, broccoli, and cauliflower. That’s what I had in the house, but if I was shopping for this meal I think I’d like to have some sauteed bok choy on the side. Yum, that sounds good.
