Hi Friends. It’s a snowy March afternoon here and I woke up wanting to bake. I love cooking, but most of the time, I prefer making real food vs. baked goods. I also like to keep things kind of healthy, but today…..that was not the case. I had seen this recipe for Salted Caramel Chocolate Chunk Cookies a few weeks ago and knew I had to try it. I don’t have a huge sweet tooth so I’m always intrigued by baked goods that are salted. Perhaps you can convince yourself that there are some health benefits in this cookie from the dark chocolate. Besides that…..the greatest benefit you get will be the enjoyment of eating this massive mouthful of sugary goodness.
In the mix went butter, sugar, salt, eggs, flour, baking soda, caramel, mini chocolate chips and chocolate chunks.
They were topped with some kosher salt before going into the oven for about 20 minutes.
How delicious do these look? The recipe says to use 1/4 cup batter for each ginormous cookie, but dare I say the first batch that went into the oven (shown here) was a little, or a lot, too big. I used about 1/8 of a cup for the other batches. Also, next time I wouldn’t bother with the chocolate chunks. I would just use the mini-chips. The chunks are good, but I think there is enough chocolate without them.
